Baileys Fudge Recipe With Caramel and Vanilla Bean

If you love the cozy flavors of vanilla and caramel with a hint of Irish cream, this Baileys fudge is a must-try. It’s soft, slightly fluffy and intensely flavored without being overly sweet. Swirls of dulce de leche give the finished squares a beautiful marbled look and add a rich caramel contrast to the white chocolate and vanilla.

Because the base uses white chocolate, marshmallow creme and a splash of Baileys, the texture is creamy and dependable — great for making ahead, gifting or adding to a holiday cookie tray.

How To Make This Baileys Fudge

The method is straightforward and forgiving: cook the sugar, butter, cream and Baileys to the soft-ball stage, then stir in white chocolate, vanilla and marshmallow creme off the heat. Pour into a prepared pan, drop softened dulce de leche over the top and swirl for a marbled finish. Chill or let come to room temperature to set, then cut into squares.

This recipe is accessible for home cooks who may be intimidated by candy making — a candy thermometer helps, but a simple soft-ball cold water test works too. Follow steps calmly and stir consistently while cooking to avoid scorching.

Non-Alcoholic Version

To make this fudge family-friendly, simply replace the Baileys Irish Cream with an Irish-cream–flavored coffee creamer or another flavored creamer you prefer. The swap preserves the creamy texture and delivers a similar flavor profile without alcohol.

Customize the Recipe

This fudge adapts well to variations. Here are easy ways to personalize it:

  • Chocolate lovers: Swap the white chocolate chips for milk or dark chocolate chips.
  • Different Irish creams: Try flavored Irish creams like salted caramel or espresso to change the character of the fudge.
  • Make your own caramel: Use homemade caramel or dulce de leche for a deeper, fresher caramel flavor.

Tips for Best Results

  • Use a candy thermometer: Precise temperature ensures the fudge sets properly. Cook to about 235°F (soft-ball stage).
  • Stir constantly: While heating, stir to prevent burning and to reach an even temperature.
  • Swirl the caramel: Drop softened dulce de leche over the warm fudge and swirl gently with a butter knife for an attractive marbled effect.
  • Storage: Store the fudge in an airtight container at room temperature for up to one week, or freeze for up to three months.

How to Serve

Cut into small squares for a rich bite-size treat. For themed occasions, use a fudge mold instead of a pan to create shapes. Fudge also makes a wonderful homemade gift—package a few squares in a box or cellophane bag with a ribbon.

Yield: about 64 pieces | Cook time: 7 minutes | Total time: 15 minutes

Ingredients

  • 1/2 cup unsalted butter
  • 1/3 cup heavy cream
  • 1/2 cup Baileys Irish Cream (or Irish-cream flavored creamer)
  • 2 cups white chocolate chips
  • 1 teaspoon vanilla bean paste (or 1/2 vanilla bean or 1½ teaspoons vanilla extract)
  • 1 (7 ounce) jar marshmallow creme
  • 10 ounces dulce de leche or caramel sweetened condensed milk

Instructions

  1. Line a 9-inch square pan with foil and lightly coat with nonstick spray.
  2. In a medium saucepan, combine sugar, butter, heavy cream and Baileys. Bring to a boil over medium heat. Once boiling, reduce heat slightly and attach a candy thermometer. Stir constantly and cook for 7–10 minutes until the thermometer reads 235°F (soft-ball stage).
  3. Remove the pan from heat and quickly stir in the white chocolate chips until melted and smooth. Add vanilla and the marshmallow creme, mixing until thoroughly combined.
  4. Pour the mixture into the prepared pan and set on a wire rack.
