That special moment when you learn the baby’s gender is full of excitement and anticipation. Some parents wait until the arrival, while others prefer to celebrate earlier. We chose to share the news with a piñata-style cake for a fun, memorable reveal.
Surprise — I’m pregnant! I’m thrilled to announce that our baby is due in January ’16. My husband and I are over the moon and counting the days to meet our little peanut. Every morning for the last few months I’ve had to remind myself that this is real: I’m growing a human inside me.

What’s the Baby’s Gender?
Because I couldn’t wait, I learned the gender at the ultrasound appointment. To make the moment special for family, I assembled a pinata cake so everyone could share the reveal when the cake was cut.
It’s a BOY!
Although I had pictured a little girl, I’m already completely in love with our son. The reaction when the sprinkles spilled out was priceless.

Now, on to the cake. I adapted a classic white cake paired with cream cheese frosting. The cake is light, tender, and moist, and the cream cheese frosting adds a tangy balance that works beautifully with the sweet cake layers and colorful filling.
How to Make a Perfect White Cake
This white cake follows techniques that help produce a fine-grained, delicate crumb:
- Coating dry ingredients with butter before adding liquids. This method helps limit gluten development for softer crumbs.
- Adding unbeaten egg whites directly into the batter. Unbeaten whites mix more evenly and avoid large air pockets, producing a velvety texture.

How to Make a Gender Reveal Cake (Piñata-Style)
Assembling a piñata cake is straightforward and very rewarding. You’ll get a few extra slices from the cut-outs — a baker’s perk!
Basic assembly steps:

- Bake three 8-inch round cake layers and cool completely.
- Slice each layer horizontally to create six even layers. Reserve two whole layers for the top and bottom.
- Cut a 2.5-inch (5 cm) circle from the center of the remaining four layers to form the hollow cavity.
- Stack the cake: whole bottom layer, add frosting, then the four layers with centers, filling the cavity with colored sprinkles or candy, and finish with the whole top layer.
- Crumb-coat and then fully frost the cake with cream cheese frosting. Sprinkle additional decoration, and refrigerate until ready to serve. Bring to room temperature before cutting for best flavor and texture.
The process takes some time but is simple, joyful, and perfect for a memorable reveal. I smiled the whole time imagining everyone’s reactions as the blue sprinkles tumbled out.

Gender Reveal Cake (Piñata-Style)
Ingredients
For the white cake:
- Cooking spray
- 1 cup (240 ml) milk, room temperature
- 6 large egg whites (about ¾ cup), room temperature
- 2 teaspoons almond extract
- 1 teaspoon pure vanilla extract
- 2 ¼ cups (250 g) cake flour
- 1 ½ cups (300 g) sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 12 tablespoons (1 ½ sticks / 170 g) unsalted butter, softened
For the frosting and filling:
- 8 oz (225 g) cream cheese, softened
- 8 tablespoons (1 stick / 115 g) unsalted butter, softened
- 4 cups (450 g) powdered sugar
- 1 tablespoon pure vanilla extract
- 1 tablespoon heavy cream
- Pinch of salt
- 1 cup blue or pink sprinkles for the filling
- ½ cup mix of blue and pink sprinkles for decorating
Instructions
- Prepare pans: Spray three 8-inch (20 cm) round cake pans with cooking spray. Line with parchment and lightly spray the parchment.
- Preheat oven to 350°F (175°C).
- In a medium bowl, whisk together milk, egg whites, almond extract and vanilla.
- In a mixing bowl with a paddle attachment, combine flour, sugar, baking powder and salt on low speed. Add butter and mix on low until no dry ingredients remain.
- Add half of the milk mixture and beat on medium for 1½ minutes. Add remaining milk mixture and beat for another minute, scraping the bowl halfway through.
- Divide batter evenly between the three pans and smooth the tops. Bake 20–25 minutes, or until golden and a toothpick comes out clean.
- Cool cakes in pans for 3 minutes, loosen edges if needed, then invert onto a wire rack to cool completely. Layers can be wrapped and stored at room temperature for up to one day.
- Make the frosting: Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, heavy cream and salt. Start on low until sugar is absorbed, then increase to medium-high until creamy.
- Assemble the cake: Slice each cooled cake horizontally to create six even layers. Reserve two whole layers. Cut 2.5-inch (5 cm) circles from the center of the other four layers.
- Place the whole bottom layer on a platter and spread about 1/8 of the frosting. Stack a layer with a cutout, spread frosting, and continue with the remaining cutout layers. Lightly frost the inner cavity walls, fill with blue or pink sprinkles, then top with the reserved whole layer.
- Frost the entire cake with remaining frosting and sprinkle the outside with the mixed sprinkles. Refrigerate until set. Bring to room temperature before serving.
