Ingredients:
- 2 cans refried beans (vegetarian)
- 2 oz shredded cheddar cheese
- 2 oz shredded pepper jack cheese
- 2 cups fresh guacamole
- 6–8 oz sour cream
- 6–8 oz fresh salsa
- 1 head finely chopped iceberg lettuce
- 2 cups chopped tomatoes
Procedure:
- Preheat the oven to 350°F (175°C).
- In a 9×13 oven-safe pan, spread the refried beans in an even layer across the bottom.
- Sprinkle the shredded cheddar and pepper jack cheeses evenly over the beans.
- Bake for 12–15 minutes, or until the cheese is fully melted and bubbling. Remove the pan and allow it to cool for about 10 minutes so the next layers will hold.
- Carefully spread the guacamole over the melted cheese and beans, using a spatula to create a smooth layer.
- Spoon the sour cream over the guacamole and gently spread it to cover evenly.
- Add the fresh salsa in an even layer over the sour cream.
- Finish by covering the salsa with the chopped iceberg lettuce, then garnish with the chopped tomatoes.
- Serve immediately with corn chips or tortilla chips for dipping.
