Ingredients

  • 9 cups rice or corn Chex cereal
  • 1/2 cup creamy peanut butter
  • 1 cup semi-sweet or milk chocolate chips
  • 1 teaspoon vanilla extract
  • 2 cups confectioners’ sugar, divided

Instructions

  1. Place the cereal in a very large mixing bowl so there’s room to toss without breaking the pieces. Put 1 1/2 cups of the confectioners’ sugar into a large, resealable gallon-size bag and set it aside.
  2. In a medium microwave-safe bowl, combine the peanut butter and chocolate chips. Microwave on HIGH for 30 seconds, stir, then microwave another 30 seconds. Stir until smooth; if needed, heat an additional 15 seconds. Stir in the vanilla extract.
  3. Pour the melted chocolate and peanut butter mixture over the cereal. Gently toss with a spatula to coat as evenly as possible.
  4. Scoop the coated cereal into the prepared bag with 1 1/2 cups of confectioners’ sugar. Seal the bag and shake vigorously until the cereal is coated. Open the bag, add the remaining 1/2 cup confectioners’ sugar, seal and shake again to ensure even coverage and to encourage clusters to form.
